Butterflies on Sun Flowers

Last time, I have posted about Sun Flower Cake....Now, I want to try to make sun flower on cup cake.

I am also interested to make some butterflies which stated on "Romantic Book" by Peggy Porschen. It were not easy to make them

The first time I make the butterfly, all were broken.
The second time I make 25 butterflies, only 12 can be finished....

and butterflies are coming...


I try to make two tiers of cup cakes...

Baking Day with Angel

Since join Natural Cooking Club ( I can say, this is the bigest cooking club in Indonesia ), my baking knowledge getting better. With the same passion, every member always share their problem, experience, knowledge, happines and sadness in baking only through email.

If I live in Indonesia, maybe I can join the class or other NCC activity..hiks..but I live in Singapore :( Not so far from Indonesia but make me missed all the activities. What I do only read what they did...The newest NCC BIG EVENT was yesterday in jakarta. All NCC member together made a new record. They made 2020 cup cakes (target only 2008 cup cakes) in one hour....*woow* --> see complete article here (in bahasa Indonesia)
I'm proud as a NCC member...( plok...plok...plok....let's give them applause )

I only read what they did? No..no..no..Ok, NCC Singapore has to have a baking event together. and...the same day as a big NCC's event in Jakarta...Yesterday,Angel (also a member of NCC ) and me were doing Baking together..( what? only 2 ?...where is the others NCC Singapore member ???? Mbak Intan, Mbak Lisa..where are u?.dan yang lainnya pada sibuk kali ya, gak pernah bales email..)

Only 2 members (included me)..but It's so fun... this is NCC spirit....BAKING and BAKING :)
Almost 5 hours, we made Japannese Cutton cheesecake, swiss roll and Nastar.. hmm Yummy...
( Hayooo..NCC member yang lain ngiri gak?..Ayo kapan ngumpul-ngumpul bikin kue bareng.....


Angel, sering2 aja latihan dirumahku ...oleh-olehnya banyak bangeeeeet....Thank u ya....

SACHER TORTE

Chocolate lover..you should try this one. Sacher Torte, the famouse chocolate cake from Austrian.Every bit of sacher torte will bring you to feel the delicious of chocolate flavour..

I make this cake for my sister in law's engagement day in Jakarta. Hope all my family will love it.

Here is the recipy..I take from NCC

Ingredients :
(A)
160gr margarine
160gr fine sugar
8 yolks
1 sdt vanilli powder
160gr dark cooking chocolate, melted.
150gr Top Flour

(B)
8 egg whites
150gr fine sugar
(C)
250gr appricot glaze

Method :
- Cream margarine and sugar until light
- Add yolks, continue creaming until light and smooth.
- Add melting chocolate, mix until well blended
- Then add half of the Top Flour, mix until well combined
- Whip the egg white until foamy. Add in the sugar gradually. Continue whipping until hard peak.
- Mix the whipped egg with the above butter until well blended
- Fold in a remaining 1/2 of the top flour. Mix until well combined
- Pour into a greased and paper line 9 inch round mould.
- Bake at 180C for 45 minutes

Chocolate GENACHE
Ingredients:
350gr Dark Cooking Chocolate, chopped
350ml whipping cream
Method :
Cook whipping cream and dark cooking chocolate, stir until the chocolate is melted completely.
Leave aside until it thickens....( more than 2 hours ...)

Finishing:
- Slice the cake horizontally into 3 layers
- Sandwich the cake layer and coat the first and third layer with the appricot glaze. The 2nd layer with chocolate genache.
- Place the cake into the fridge for 30 minutes
- Take the cake out from the fridge. Put it on a wire rack. Pour the chocolate genache on top. Shake the wire rack to allow the glaze run evenly. Leave until set.

Ready to "fly" to Jakarta

Durian Cake

The texture almost the same with butter cake. The taste...hmmm...it's yummy.but
I think better you add durian flavour or durian puree to make it more "durian" taste

Durian Cake - NCC (Fatmah Bahalwan)
Ingredients :

250gr butter
250gr fine sugar
6 eggs
250gr Top Flour
1 tsp baking powder
1 tsp baking soda
250gr durian puree

Method :
- Heat oven at 180C, Grease a round 8inch pan
- Cream butter and sugar until light, gradually add egg until well combined.
- Shifted top flour, baking powder, and baking soda into the butter mixture, mix until well blended
- Add durian puree, and mix untill well combined
- Pour it into pan
- Bake for 45 minutes

Resep in Bahasa Indonesia.
Bahan :
250gr mentega
250gr gula pasir
6 butir telur
250gr tepung terigu
1 sdt baking powder
1 sdt soda kue
250gr daging durian, haluskan

Cara membuat :
- Panaskan Oven pada suhu 180drajat (kalau pakai oven ku agak kepanasan...jadi aku buat oven 160drajat ajaaa.....)
- Kocok mentega dan gula hingga mengembang pucat, masukkan telur satu persatu sambil tetap dikocok hingga tercampur rata.
- Ayak tepung terigu, baking powder dan soda kue, masukkan kedalam adonan mentega, auk rata
- Masukkan daging durian halusa, aduk rata, tuang adonan kedalam loyang tulban
- Panggang dalam oven selama 45 menit, hingga matang ........

Japanesse Cutton Cheesecake

Because this cake is cutton cake, the textur is very soft..It's not to cheesy if you compare with other cheese cake. So for cheese lover....stop thinking about cheese..just feel the softness of this cake and yummy lemon sensation.

Today, my friend ask me to make JCC for her friend's birthday,Felix....(actually, he is also my friend :) HAPPY BIRTHDAY ....FELIX.....(Met panjang umur ya...bahagia selalu...cepat dapat jodoh..he..he.he...Abisnya felix jalan mulu siiiih....Stop..in english please...:))
Garnish with fresh strawberry and Kiwi. Glaze both fruit with appricot gel.
For wishing word-Chocolate bar, I use white chocolate and dark cooking chocolate..

Tips :
To cut the chocolate bar into desired shapes, please use hot knife to make it looks smooth...

Japanese Cutton Cheesecake(Source: Yasaboga)
Mix and sift:50 gr flour (all purpose)
50 gr cornstarch

Ingredients:60 gr unsalted butter
250 gr cream cheese, at room temperature
120 ml whipping cream
3 yolks
1 egg (whole)
2 tsp grated lemon rind
5 egg whites
1/8 tsp salt
125 gr castor sugar
1 tsp lemon juice ---------> I used 1 tbs

Topping:
2 Tbsp apricot glaze or jam
2 Tbsp water

Method :
- Prepare a round pan ,9inch diameter (If you want the cake looks higher, use round pan 8inch) grease with butter or margarine. Heat the oven at 150 degree Celcius.
- Place butter, cream cheese and whipping cream in mixing bowl. Cook on low heat, stir over until thick, remove from heat.
- Mix in flour mixture until well combine. add yolks and 1 egg (whole) until well blended. Stir in grated lemon rind, blend well, set aside.
- Beat the egg whites until frothy, beat in sugar and lemon juice gradually while continue beating until it forms soft peaks.
- Spoon 1/3 of egg whites batter into cream cheese mixture, blend well. Fold in this batter to the remaining egg whites batter, blend well.
-Pour batter into round spring form pan, bake au bain marie (water bath) for approximately 75 minutes until the surface is done, golden yellow in color.
- Remove from oven, let it cool for 10 minutes..then open the pan, transfer cake onto plate. Mix apricot glaze/jam and water, heat until the liquid is homogeneous and easy to brush onto cake. Brush the cake surface with this glaze.

NASTAR (pineapple filling)

I got recipy from my friend Angel .This Nastar is nice and yummy..not too sweet and not too hard...and also very simple to make it....

English Version : (for Bahasa Indonesia see below...)

Ingredients for filling
500gr scraped pineapple
2cm cinnamon
150gr fine sugar
1/4 tsp salt
1 tsp lemon juice

Method for filling :
Cook pineapple and cinnamon until boiled.Add and mix sugar, salt and lemon juice until well combine. Cook until dry.
Note:
The fastest way..You can buy the pineapple filling at baking store :) But make sure, You choose dry pineapple filling

Ingredients :
150gr salted butter
100gr margarine
50gr icing sugar
2 yolks
280gr top flour
35gr maizena/corn flour
20gr milk powder

Glaze :
2 yolks
1 tbs thick cream ----> I didn't use this
1/8 tsp salt

Method :
Preheat oven at 150C, greace the baking tray with butter or margarine
1. Whisk salted butter, margarine and icing sugar around 30 seconds (low speed)
2. Add yolks, whisk still in low speed around 5 second.
3. Mix flour, maizena and milk powder then sifted into dough
4. Refrigerate the dough about 15 minutes
5. Take a little bit dough, give the pineapple filling, then make it round like a ball.
6. Put on baking tray
7. Bake in oven about 15 minutes.
8. Brush the dought with yolks glaze. ( I did twice, so it looks shiny...)
9. Bake again around 20 minutes

I make another pattern for this Nastar... LEAF....
When Chirstmas, my mother always make this pattern.....It's look nice if you make it not too big.


Recipy in Bahasa Indonesia
Bahan Isi:
500gr nanas parut
2cm kayu manis
150gr gula pasir
1/4 sdt garam
1 sdt air jeruk lemon

Cara membuat:
Masak nanas dan kayu manis sampai air meresa. Tambahkan gula pasir dan garam. Aduk sampai meresap. ambahkan air jeruk lemon.aduk rata

Catatan : Kalo mau cepet...beli aja deeeh bahan isinya di TBK....he..he.he. :) tapi pasti'in lho, bahan isinya pilih yang kering...

Bahan Kulit
150gr mentega asin (salted butter)
100gr margarine
50gr gula tepung
2 kuning telur
280gr tepung terigu protein rendah
35gr tepung maizena
20gr susu bubuk

Bahan Olesan :
2 kuning telur
1 sdm krim kental --- aku gak pake
1/8 sdt garam

Cara membuat:
Panaskan Oven 150drajat, Olesi loyang dengan mentega/butter
1. Kocok mentega asin, margarine, dan gula tepung dengan kecepatan rendah selama 30 detik
2. Tambahkan kuning telur, dan kocok kembali masih dengan mixer kecepatan rendah 5 detik saja.
3. Masukkan tepung terigu, maizena dan susu bubuk sambil diayak dan diaduk rata.
4. Masukkan adonan dalam lemari es selama 15 menit
5. ambil sedikit adonan, beri isi dan bentuk bulat seperti bola.
6. Letakkan di loyang
7. Oven selama 15 menit
8. Olesi dengan bahan olesan
9. Oven lagi 20 menit

COOKIES

Buat Cookies lagi, kali ini nyoba resep "Kue Tulang - NCC "...

Bahan:
300gr mentega
100gr gula halus
4 btr merah telur
500gr tepung terigu
1 sdm maizena
1 sdt vanilla

Cara :
- Mentega dan gula dikocok dengan mixer kecepatan tinggi sampai lembut, masukkan merah telur kocok dengan kecepatan rendah sampai tercampur rata.
- Masukkan terigu, maizena dan vanilla aduk rata (uleni dengan menggunakan tangan)
- Tempatkan adonan diatas kertas roti lalu ratakan dengan tangan
- Tutup dengan kertas roti lagi, giling tipis dengan kayu giling
- Cetak dengan cookies cutter sesuai selera
- pindahkan ke loyang tanpa dioles
- panggang selama 160 - 15 menit plus 2 menit oven atas
(atau 170drajat slama 10 menit plus 1 menit oven atas )
